Omakase Wednesdays at FUMI

Every Wednesday evening, FUMI opens its doors to a limited number of guests for an immersive Omakase experience that celebrates the precision, restraint and artistry of Japanese cuisine. Rooted in tradition, Omakase translates as “to respectfully leave another to decide what is best”, an invitation for diners to surrender the menu entirely and trust the chef’s expertise, intuition and creativity.

At FUMI, this philosophy is interpreted through a six-course tasting journey composed and executed by Executive Head Chef Ronald Mindo. Each course is selected to showcase balance, seasonality and technique, drawing on premium ingredients and the chef’s own evolving inspirations. The progression is designed to feel harmonious and deliberate, moving from lighter expressions to deeper, more complex flavours as the menu unfolds.

The experience is shaped not only by what appears on the plate, but also by the atmosphere of the evening: the slow rhythm of service, the focused attention of the kitchen and the quiet anticipation that comes with not knowing the next dish until it arrives. This approach encourages guests to engage more fully with texture, temperature, aroma and detail, hallmarks of the Omakase tradition.

To complement the tasting menu, guests may opt for a wine and sake pairing at £110 per person, curated to accentuate the nuances of each course. Alternatively, the menu without pairing is available at £80 per person, allowing diners to choose their own drinks from FUMI’s bar programme.
